Ingredients:
1 cup bulghur (cracked wheat)
1 cup water
3 medium tomatoes, chopped
2 bunches of parsley, chopped (about 1 cup)
4 stalks green onions, chopped
1 bunch mint, chopped (about ½ cup)
¼ cup lemon juice
¼ cup olive oil
Salt to taste
Directions:
Soak the bulghur in water for 20 - 30 minutes.
Drain and squeeze the water out.
Mix with the rest of the ingredients, adding the lemon juice and olive oil last.
