Shrimp and Grits
6 Slices bacon, diced
1 pound medium shrimp, peeled
2 cups sliced mushrooms
1 cups sliced green onions
1 large clove garlic, pressed
3 teaspoons fresh lemon juice
Dash hot red pepper sauce
2 teaspoons chopped fresh parsley
Salt, freshly ground pepper to taste
1 recipe hot cheese grits, see basic grits recipe
1. Fry bacon in large skillet until browned at edges but not too crisp. Drain on paper towels and set aside. Leave fat in skillet.
2. Return skillet to medium-high heat. When it is hot, add shrimp and cook until they begin to color. Add mushrooms and cook until they begin to soften, about 4 minutes. Sprinkle with green onions, bacon and garlic. Season with lemon juice, red pepper sauce, parsley, salt and pepper.
3. Stir cayenne pepper to taste into the grits.

Cooking time 20 minutes
Yield: 4 servings
