Sushi Mike's Fish -n- Chips
Recipe courtesy of:

½ avocado
1/3 lb spicy tuna filet
2 tsp Tobiko (Flying Fish eggs)
1 stem cilantro
½ tomato
1/3 onion
½ tsp salt
½ black pepper
1/3 medium lemon
1/3 grape fruit oil
wonton skim or tortilla chips

Chop tomato, onion and cilantro; mix together with salt and black pepper. Squeeze in lemon juice and grapefruit oil. Place to the mixture to the side. Slice spicy tuna and avocado into small pieces. Use 2 inch round, hallow stainless steel layering tool, layer tuna, then tomato mixture, avocado and Tobiko on top. Slowly remove layering tool from stacked mixture. Garnish with tortilla chips or crispy wonton.
