Roasted Tomato and Garlic Soup

Roasted Tomato and Garlic Soup

20 large tomatoes
3/4 cup olive oil
5 heads of garlic
vegetable or chicken broth
garlic salt

Extract garlic pulp from the roasted heads. Place tomatoes and garlic in blender. Puree in batches until smooth. Transfer to large saucepan. Add broth as needed to achieve desired consistency. Heat thoroughly and adjust seasonings to taste.
