Maiale Con Pancetta

2 pork tenderloins
4 oz pancetta sliced thin
2 sprigs rosemary
2 sprigs sage
1 tsp garlic
1 tsp parsley
1 cup white wine
1 cup demi glace
1 tbl olive oil
salt and pepper

1. Lay pork tenderloins on cutting board with 1 sprig of rosemary and sage on each
v 2. wrap with thinly sliced pancetta

3. Heat oil in large saute pan, brown tenderloins on all sides and finish in 400 degree oven and cook until medium.

4. Remove tenderloins to clean table

5. Place saute pan on medium heat

6. Add garlic and parsley

7. Add white wine and simmer by half

8. Add demi glace

9. Season with salt and pepper

10. Slice tenderloins, arrange on plate, top with sauce
