Intro Introduces New Chef and Dining News

Lettuce Entertain You’s ground-breaking Intro has been hot since taking over in L20 space on Lincoln Park West. The unique restaurant serves as an incubator for different chef talents across the country, housing one chef-in-residence for a few months and granting them conservatorship over the menu. It offers Chicagoans an opportunity to sample talent from beyond our city borders, while providing something totally new and fresh on a recurring basis. As Intro prepares to welcome its second chef-in-residence, Erik Anderson, the restaurant also has some other news to share.

Intro’s inaugural chef CJ Jacobson will pass the torch to Anderson on May 14. When this happens, the restaurant will completely pivot to reflect Anderson’s style, which he describes as a modern approach to French cooking. This will not only dictate the food, but also the vibe, the music, the server uniforms, and everything else that comes with restaurant design. The native Chicagoan has clocked time at impressive kitchens such as Thomas Keller’s acclaimed California restaurant The French Laundry and Nashville’s The Catbird Seat. For him, Intro serves as a place to refine his craft before opening French restaurant Brut in Minneapolis this fall.

Intro has also introduced a new weekly vegan prix fixe available every Tuesday through the end of Jacobson’s tenure in May. The four-course menu includes spring garlic veloute with lemon myrtle and local juniper; grilled young artichokes with creamed radish and an emulsion of wild California bay and rhubarb; and spruce and grapefruit sorbet with Cara Cara orange custard and milk chocolate-eggplant cake.
