Cozze Pomodorro
Recipe courtesy of:

1 lb mussels (Prince Edward Island)
4 tomatoes canned peeled Italian Plum
1 tsp chopped garlic
1 tsp chopped parsley
1 cup white wine
salt and pepper
1 tbl olive oil

1. Heat oil in large skillet, add mussels and stir

2. Add garlic and parsley and stir

3. Add white wine, bring to simmer

4. Add tomatoes, crush by hand and simmer until all mussels are open

5. Season with salt and pepper
