Chicagoans can’t get enough burgers. Nowadays it’s rare for a restaurant not to offer some sort of burger on their menu, and burger-centric restaurants pop up faster than groundhogs in February. But despite the surfeit of ground beef, we can’t get enough. Considering succulent comfort food is best appreciated in the thick of tundra-like winter, here’s the latest burger news you need to know in Chicago.
Steakhouse burgers are some of the best burgers. Makes sense, since steakhouses have the magic beef touch. It’s important to note that David Burke’s Primehouse is expanding its beef repertoire this month with a new burger addition: the Thin Burker, available as part of the restaurant’s newly instated Prime Spot lunch program. Offered alongside the restaurant’s award-winning crowd favorite, the 40 Day Burker, the Thin Burker is a daintier interpretation made with dry-aged beef that imparts a punch of umami. It’s a six-ounce patty cooked on the flattop, which begets a crispier fringe around the exterior of the patty. It’s topped off with pickles, onions, American cheese, and served with black pepper fries.
Acadia may be primarily renowned for its high-end take on seafood (and those tasty lobster rolls), but last year the South Loop sensation rose to acclaim for its salacious burger. A riff on the Burger King Stacker, chef Ryan McCaskey’s bar menu burgers developed a cult-like status of their own. Now the chef is at it again with a new burger innovation: a six-ounce Wagyu-brisket-chuck burger heaped with mushroom ragout and Gruyere Grand Cru on a sesame bun, adjoined by pickled cauliflower, foie gras butter, and lemon-pepper french fries. Just like mom used to make, right?
New York City-based Shake Shack came roaring into town a couple months ago with its inaugural Chicago location in River North. Lines meandered down the street, seats were perpetually packed, burgers flew out of the kitchen at a feverish pace. Now there’s something new to get excited about. Shake Shack’s newest menu offering is the ShackMeister Burger, a limited time menu supplement made with Angus beef, cheese, crispy marinated shallots, and that addictive ShackSauce. Queue up now.
You can be forgiven for thinking Chicken Shop at Soho House is nothing but chicken. As delicious as that chicken is, it’s worth mentioning that Chicken Shop is more than roasted poultry. Indeed, the restaurant offers a killer burger as well. The curiously dubbed “Dirty Burger” is a classic cheeseburger designed to coincide with the restaurant’s focus on simplicity and traditional flavors. It’s the high-quality ingredients and precision that goes into each patty that makes this dirty creation really soar.
Speaking of refined simplicity, wholesome seasonal cookery doesn’t get any better than The Winchester. Beloved for its waffles, its avocado toast, its cocktails, and everything else that comes out of the kitchen or bar, The Winchester has something else for you to fawn over with its new weekly burger promotion. Available on Thursdays, The Winchester is now offering 1/2-pound double-patty burgers topped with housemade bread & butter pickles, shaved onion, Butterkase cheese, and special sauce on a Publican Quality Meats sesame bun.
