The unique restaurant serves as an incubator for different chef talents across the country, housing one chef-in-residence for a few months and granting them conservatorship over the menu. It offers Chicagoans an opportunity to sample talent from beyond our city borders, while providing something totally new and fresh on a recurring basis.
