Tropical Tiramisu

Tropical Tiramisu
Recipe courtesy of:

1 (8 ounce) package mascarpone cheese
¼ cup honey
2 tablespoons crushed pineapple, drained
2 cups whipping cream, whipped
1 tablespoon passion fruit puree
¼ cup of spiced rum
¼ cup pineapple juice
1 (4.75 ounce) box Soft Lady Fingers (available at Trader Joe's)
¼ cup chopped crystallized ginger
¼ cup chopped macadamia nuts
½ cup fresh strawberries, halved
2 kiwi, sliced
½ cup sliced fresh mango, garnish
½ cup shredded coconut, toasted

In a medium bowl, beat together the mascarpone cheese, honey, and crushed pineapple until light and fluffy. Fold in whipped cream; set aside. In a small bowl, combine the passion fruit puree, rum and pineapple juice; set aside.

Dip both sides of the lady fingers briefly into the passion fruit/rum/pineapple juice mixture, (use as many lady fingers as you like according to the size of your martini glass).

Place the lady fingers vertically in the martini glass; (when they are soft they can be adjusted to fit in the center of the glass). Spoon a little of the mascarpone mixture in the center of each glass; sprinkle on the ginger and nuts. Repeat layers. Cover with plastic wrap and refrigerate for 2 hours or overnight. Garnish each serving with fresh strawberry, kiwi, mango slices and toasted coconut.
