Spaghetti alla Carbonara

Spaghetti alla Carbonara

8oz spaghetti
1oz white onion
1 whole egg
2-3oz pancetta or guanciale
.5 oz olive oil
1 oz dry white wine
pecorino and parmigiano cheese to taste
salt and pepper to taste

Bring a large pot of salted water to boil and add spaghetti, cook for about 9-10 mins

In a saute pan heat pan and add olive oil

Add pancetta or guanciale and cook for about two minutes until fat is rendered

Add white onion and saute until translucent

Add white wine and let it evaporate to _

In separate bowl mix whole egg with 1oz of both parmigiano and pecorino cheese, salt and pepper — parsley if you wish

Add spaghetti to saute pan and mix ingredients well over a medium heat, then add the spaghetti to the egg mixture in bowl.

Make sure to keep stirring the spaghetti with the egg mixture. Add more cheese and fresh ground black pepper to taste
