Ingredients:
2 packages jiffy corn muffin mix
1 11 ounce can of mexicorn
½ cup whole milk
2 whole eggs, beaten
½ cup yellow onions, minced fine
1/3 cup jalapeno peppers, minced fine
1 tablespoon garlic, minced fine
Directions:
1. Preheat oven to 400 degrees
2. Blend ingredients and let stand 5 minutes
3. Fill muffin cups or greased tins ½ full and bake until done, about 15 to 20 minutes
