Ingredients for Gazpacho:
1 Honeydew Melon
1 bulb Fennel
2 Yellow Tomatoes
1 Red Onion
1 Hothouse Cucumber
Tarragon
Melon Liqueur
Directions for Gazpacho:
-rough chop fruit and vegetables and puree in blender
-season with tarragon, liqueur, salt and pepper
-chill and reserve for service
Ingredients for Red Onion Creme Fraiche:
1 pint Creme Fraiche
½ Red Onion, minced
1 tablespoon Chives, sliced
Directions for Red Onion Creme Fraiche:
Mix ingredients together and season
Ingredients for Tuna:
2 lbs Tuna, center cut
1 cup Diced Watermelon
½ Red onion, minced
1 orange
Chives
1 yellow tomato, diced
Extra Virgin Olive oil
