Recipe courtesy of:
1 lb. butter
¼ cup shallots peeled & diced
1 lb. stilton blue cheese
2 tsp black pepper
2 tsp kosher salt
¼ cup white wine or lemon juice
Note: Add rosemary, orange juice & zest or olives to change flavor.
1. Slowly cook shallots in butter (no Color)
2. Add wine reduce till dry
3. Mix ingredients in mixer or in bowl until well mixed
4. Adjust seasonings
Generously top prime steak with blue cheese butter and broil.
