When it comes to new food trends in Chicago, frozen food is red hot. Thanks to new and upcoming chef-driven markets like Wixter Market and Frozen Foodies, frozen food is earning its due time in the spotlight.

First up is Wixter Market, a frozen seafood market in Wicker Park from owner Matt Mixter. This seafood shop specializes in restaurant grade super frozen and flash frozen products previously unseen in the public market setting. From octopus and salmon to hirame, King crab, and lobster tails, Wixter Market offers a sea of options that don’t come any fresher. Derived and inspired from Mixter’s longstanding rapport with high-end seafood companies across the globe, Wixter bridges the gap between top-notch seafood restaurants and casual neighborhood grocery stores, bringing a restaurant-caliber sourcing experience into the home. Using super frozen technology, Wixter freezes the core temperature of its products to a minimum -76°F, resulting in sashimi-grade ingredients in individual canned portions. Along with all that seafood, Wixter rounds out its repertoire with fish-friendly side items like soy sauce, wasabi, ginger, cutlery, spices, and cedar planks.

Soon to come, Lincoln Park will soon welcome a chef-driven frozen food market all its own with Frozen Foodies. Featuring frozen meals designed by local chefs like Rodelio Aglibot, Lee Ann Whippen, and various Lettuce Entertain You folks, the concept is the masterwork of Steve Menza from Menza Foods. The first of what he hopes will become a chain across the country, the Lincoln Park Frozen Foodies will showcase carryout dishes frozen with FreshFreeze cryotechnology and vacuum-sealed. To start, shoppers can expect dishes like shrimp and pork dumplings and shrimp and grits.
