Duck, Duck, Goose
The season of the hunt and the harvest is upon us, and to celebrate, Paul Virant invites cookbook author Hank Shaw into his kitchen at Vie for a special dinner on October 17. Shaw’s award-winning work is exhibited in his masterful Hunt, Gather, Cook, but it’s his brand new book, Duck, Duck, Goose, that brings him together with Virant for the autumnal event. This marks the second time Shaw has made an appearance at Vie, the first time being to co-host a launch event for Hunt, Gather, Cook in 2011. The revered forager, hunter, gatherer, and food writer explores the world of waterfowl and how to cook them in his newest endeavor, techniques that are enacted at Vie and on full display for customers to see and eat.
The five-course waterfowl-themed meal delves into the various ways to cook duck and geese, according to Shaw’s recipes. It’s an apt homage to fall cookery and the traditions of hunting and harvesting in preparation for winter. While Virant and his teams both from Vie and Perennial Virant toil away in the kitchen, Shaw will also be on hand in the dining room to discuss the book and the dishes being served.
