Brew Like a Cook
Moody Tongue Brewing Company is one of the most eagerly awaited breweries in Chicago, from a beer maestro with a distinct knack for brewing from a chef's perspective. Jared Rouben previously brewed envelope-pushing beers at Goose Island, crafting unique, ingredient-driven creations indicative of the seasons and composed with the same sentiments of a refined dish. For his own imminent brewery, “culinary brewing” is in the offing, but in the meantime he’s planning a series of culinary brewing classes called “Brewing Like a Cook” at Ampersand, the new pop-up event space inside Kinmont.
As Rouben has always done through collaborations with local chefs and ingredient-sourcing from farmers’ markets, the Brewing Like a Cook series goes well beyond the norms of beer by incorporating culinary techniques, articulating the marriage of beer and food, and more. During each class, Rouben will demonstrate said techniques and oversee as attendees craft their own brews. Each lesson focuses on a different ingredient and different beer style.
