Back to Scoula Season

While kids are back in school, so too is it time for adults to get back to class as well. Only in this case, the classes are food-related and the instructor is 312 Chicago’s Luca Corazzina.

Scoula 312 is back again, and the curriculum is Italian cuisine. Taking place every Saturday from September 12 through October 17, Corazzina’s classes are themed forays into Italy’s regional cuisines and techniques. These hands-on lessons are designed to equip attendees with knowledge on Italian cooking in the home setting.

The lesson plan in September focuses on the Art of Fish, wherein the chef will demonstrate knife techniques for prepping fish and offer recipes for how to utilize fish in Northern Italian dishes. After fish, it’s on to the Art of Pasta. Corazzina will teach students how to roll pasta from scratch and mix doughs into various fall recipes.

Classes are every Saturday at noon and include a light meal, recipe cards, and a bottle of 312 aged balsamic. Additionally, students are welcome to order wine during the lesson.
