Sommelier-selected Pizzas
It’s not every day sommeliers get crafty with pizza. The Boarding House gives wine pros the unique opportunity to play pizzaiolo. Contrived by Master Sommelier/The Boarding House owner/former Check, Please! host Alpana Singh, “Let’s Eat Somm Pizza” is a chance for sommeliers to wear another hat and try their hand at pizza conception.
The monthly series features a different Chicago sommelier each month, with May’s sommelier being Rachael Lowe of Spiaggia. Each sommelier is tasked with selecting the wine they’d like to pair with their pizza, then working in tandem with The Boarding House’s executive chef Tanya Baker to design an apropos pie. Lowe’s pizza features West Loop Salumi Spanish chorizo, dates, Manchego, and roasted piquillo pepper sauce, paired with Anima Negra AN/2 from Mallorca.
Next up, Sepia’s sommelier Arthur Hon steps into the saucy spotlight with a Hawaiian-style pizza in June, adjoined with the 2005 Yves Breussin, Vouvray Moelleux Reserve. Fernando Beteta, Master Sommelier from Tenzing, follows in July. His pizza of choice features spicy Italian sausage, shaved fennel, fennel seed, mozzarella, olive oil, salt, and cracked pepper, while his wine is the 2012 Mauro Molino Barbera d’Alba from Italy.
