Scoula is in Session
Just as kids stock up on backpack supplies and head back to school, food-minded adults can do likewise at 312 Chicago. Culinary classes are back in action at the Loop’s revered Italian restaurant, and the headmaster is executive chef Luca Corazzina.
Scoula 312 is like school, but better because the lesson of the day is Italian cuisine and the chances for detention are nil. On the first or second Saturday of every month through the end of the year, Corazzina leads a themed cooking class geared at bringing his Italian culinary know-how into the home kitchen. Considering Corazzina learned the ropes by his mother’s side in his own home kitchen, the man makes the perfect teacher.
The lesson plan through the rest of the year features the Art of Fish on September 6, the Art of Risotto on October 11, the Art of Meat on November 8, and the Art of Holiday Recipes on December 6. So by the end of the 2014, you’ll be armed with a full arsenal of Italian cooking knowledge. Each class starts at noon and includes recipe cards, a bottle of 312 Aged Balsamic, and snacks.
