How ’Bout Them Apples?

One of the most pivotal fall ingredients, apples are rolling onto menus throughout Chicago. From sweet to savory to potable, here are the apple creations you need to try this season.

The pome fruit comes in both edible and drinkable forms at Presidio. The Bucktown bar is making duck fat apple crisp for dessert, featuring duck fat-enriched oats, caramel, fresh thyme, and vanilla ice cream served a la mode. To drink, pair it with the Sweater Season cocktail, featuring sherry, Scotch, spiced chamomile cider syrup, dried apple, lemon, and grated cinnamon.

At White Oak Tavern & Inn, bartenders are using an olden apple cider vinegar preservation technique for their Frontier Shrub, a cocktail outfitted with Koval Bourbon, creme de cassis, Breckenridge Bitters, and cranberry shrub.

Apples align with foie gras for a particularly indulgent dish at North Pond. The seasonally minded restaurant in Lincoln Park combines shaved foie gras mousse with green apple, cocoa-beet jam, sage, biscotti, and candied filberts.

Start with salad at Southport Grocery & Cafe, where the latest seasonal salad medley contains field greens, fennel, shaved red onion, Brussels sprouts, apples, grapes, vanilla walnuts, blue cheese, and balsamic vinaigrette.

Another apt salad can be found at Publican Quality Meats. The handiwork of chef AJ Walker, the fruitful dish features kohlrabi, walnuts, pumpkin seeds, Midnight Moon, endive, watercress, horseradish, and apple cider.

Mon Ami Gabi’s pastry chef Erin Mooney is thinking outside the typical pie shell this season for her new fall dessert, a candied apple brown butter tart. Mooney is also responsible for the apple-oatmeal cookies lining the market counter at Summer House Santa Monica.

Start your weekend brunch with a sip of cider at Pork Shoppe’s Andersonville location. The barbecue restaurant has updated their mimosa to include apple cider in lieu of orange juice.

A couple new cocktails are also on deck at South Water Kitchen. The Fall 75 is a combination of Remy Martin, Marie Brizard Orange Curacao, fresh lemon juice, Journeyman Apple Cider Liqueur, and Gloria Ferrer Blanc de Noirs sparkling wine. Then there’s the Boots with the Furr, a potent mix of Laird’s Apple Brandy, Boulard Calvados, Gran Classico, birchbark syrup, fresh lemon juice, and Fee’s Old Fashioned bitters.
