Distillery and Brewery Team Up For New Spirit
Thanks to an exponential rise in breweries and distilleries in and around Chicago these past few years, never has our fair city been so spirited. One of the distilleries at the forefront has been CH Distillery, which innovated as a distillery and cocktail bar in the West Loop, where customers could actually see where their vodka and gin was distilled before it made its way into their drinks. The portfolio has expanded over the months to include rum, bourbon, amaro, and now its latest creation, the Spirit of Du Sable.
Launching this week, the Spirit of Du Sable is a unique collaboration with Chicago brewery Ale Syndicate. To make the spirit, CH barrel-aged Ale Syndicate’s du Sable Hoppy Saison for six months before distilling it. CH co-founder and head distiller Tremaine Atkinson pegs the results as a spirit with hop and saison aromas over a malty palate.
To celebrate this latest spirit, CH is hosting a launch event on January 27. CH beverage director Krissy Schutte will whip up a special cocktail featuring the spirit, called In Good Company, made with Spirit of Du Sable, honey syrup, walnut bitters, orange bitters, and angostura. There will also be Ale Syndicate’s du Sable Hoppy Saison beer available and performances by local band Big Sadie.
