Collaborations Beget New Beer, Pizza, and Cocktails
Chicago bars and restaurants are all about collaborations, not only by supporting one another but by working together to create specific pairings, dishes, and drinks. Such is the case with a couple new collaborations taking place this month, including a zany pizza-beer combo and some special cocktail teamwork.
When a pizza and beer pairing derives inspiration from the Comic Con convention, you know it’s going to be out of this world. And it almost literally is, as Revolution Brewery and Dimo’s Pizza team up to curate a wild one-two punch that includes a Galaxy Hero beer and a soda- and Cheeto-topped pizza created in time for the Chicago Comic Con convention. The custom beer is described as an IPA laden with Galaxy and Zythos hops, which lend a crisp, dry finish on the palate. It’s ideally matched with Dimo’s special Valar Morghulis (a Game of Thrones translation that means “all men must die”), created especially for the Galaxy Hero. The pizza features a caramelized onion base, pulled pork, Mountain Dew gastrique, Flaming Hot Cheetos gratin, and cheddar cheese. The pizza is available by the slice or whole pie from April 21 through April 27, and the pairing is available at Dimo's only.
In other beverage news, Crafthouse Cocktails and CH Distillery have teamed up to create two new cocktails to add to the Crafthouse line of prestigious bottled cocktails from Charles Joly and Matt Lindner. The Moscow Mule and Southside join the Crafthouse roster with the help of CH Distillery’s new custom spirits designed specifically for the Crafthouse potables. The Southside utilizes the London Dry style gin, while the Moscow Mule features CH vodka. For each spirit, Joly worked closely with CH master distiller Tremaine Atkinson to ensure each one synced up seamlessly with the Crafthouse vision for flavor profiles. Both new bottled cocktails are now on the market.
