Chicago’s First Local Amaro
Thanks to a surge of breweries and distilleries in Chicago these past few years, the city has seen a huge uptick in locally crafted spirits and liquors. But until now, amaro was not one of them. One of the distilleries leading the way, CH Distillery continues to innovate by launching the first Chicago-made amaro.
CH Distillery is a distillery and cocktail bar that popularized itself with its house-distilled vodkas and gin. Gradually, they added more to their lineup, including bourbon, rum, and limoncello. The latest entrant to the roster is amaro, CH’s take on the classic Italian herbal liqueur. Co-founder and distiller Tremaine Atkinson uses CH rum as a base, adding various ingredients from local establishments and farms, including gentian root and grapefruit peel from Rare Tea Cellar, Madagascar cocoa nibs from Ethereal Confection, and clover honey from Hawk Hill Bee Farm.
Beverage director Krissy Schutte is also highlighting CH Amaro in cocktails such as the CH-centric Roman Holiday with CH Amaro, CH Orange Curacao, CH London Dry Gin, lime, angostura, and orange bitters.
