Sips on the Roof
Take happy hour to the rooftops this spring and summer, and eat and drink with the city as your backdrop. Here are four newly reopened rooftop bars to check out the next time you’re looking for an al fresco drink.
The Terrace at the Peninsula offers outdoor seating for lunch, dim sum, cocktails, and dinner. You can take in views while sipping drinks like strawberry lemonade or a tequila and cucumber cocktail and eating spring rolls and pork dumplings.
The Fountainhead has opened its rooftop to serve craft beers and whiskey along with seasonal dishes by executive chef Cleetus Friedman. The rooftop menu includes sriracha deviled eggs, roasted beet salad, and pickles.
Drumbar’s 18th floor rooftop terrace features inventive cocktails by beverage director Craig Schoettler and views of Lake Michigan and the Hancock building. This summer, Schoettler will be serving up slushies like Bacardi 8 with fresh mango, lime, and chili. He’ll also be dispending Moscow Mules on draft and is working on a liquid nitrogen margarita.
The J. Parker, which is located atop the Hotel Lincoln and has views of the Lake, has a new bar manager, Tony Selna, who is starting a punch bowl program. He’ll also serve cocktails like Drink #2, made with Bombay gin, Atlantico rum, kumquat syrup, lemon, cranberry jam, and Domaine de Canton.
