Meat Selection:
9 ounce beef tenderloin cut into (3) 3-ounce pieces.

Parmesan Crust Topping Ingredients:
1 pound of parmesan cheese
2 ounces of bread crumbs
2 teaspoons of garlic powder
2 tablespoons of chopped parsley
1 cup of olive oil

Parmesan Crust Topping Directions:
Mix together the parmesan cheese, bread crumbs, garlic powder, and parsley. Slowly add the olive oil until mixture turns into a paste.

Horseradish Crust Topping Ingredients:
1 pound of fresh chopped horseradish
1 teaspoon of fresh chopped garlic
2 teaspoons of garlic powder
1 teaspoon fresh chopped rosemary
1 cup of olive oil

Horseradish Crust Topping Directions:
Place the horseradish in a food processor and pulse until chopped fine. Add the chopped garlic, garlic powder, rosemary, and olive oil. Pulse in the food processor until blended.

Blue Cheese Topping:
Purchase any fine crumbled blue cheese from the market.
