Ingredients:

5 oz Thai Chicken*
3 oz Julienne Vegetables
3 oz Cucumber
2 oz Fried Wonton
2 oz Radichio
2 oz Peanut Vinaigrette*
2 oz Caramel Soy Sauce
2 oz Cashew Sauce
¼ Head Lettuce

On an oval platter, placed washed lettuce, arrange vegetable and dipping sauces. Build your lettuce wrap as you desire!

*PEANUT VINAIGRETTE

Ingredients:

8 oz soy sauce 1 Tsp. chopped garlic 2 Tbs. minced ginger 8 oz peanut butter ½ cp sesame oil ½ cp rice wine vinaigrette 1 qt. oil blend 1 Tbs. chile garlic sauce 2 Tbs. cilantro (chopped) ¼ cp Honey

Prep Steps:

1. place soy with garlic, ginger, peanut butter, and vinegar in cambro
2. blend with wand mixer
3. slowly add oil to make stable emulsion
4. add cilantro last

*ASIAN CHICKEN MARINADE

Trim fat from chicken and add marinade place chicken in cooler for 2 to 3 hrs before cooking the chicken. Peanut vinaigrette dressing: ½ cp
