Ingredients:
3 oz smoked duck breast
1 fresh pear
3 tbs pear vinaigretts
2 tbs walnut oil
1 tbs cold water
1 pinch brown sugar
1 pinch kosher salt
½ bunch of watercress
½ bunch of frisse
¼ radicchio
Directions:
Mix all ingredients except smoked duck and pear together in a large bowl. Toss all salad, frisse, raddichio and watercress. Cut smoked duck breast in 4-5 strips. Place on plate with tossed salad on top and pear slices on the side leaning against the salad. Drop one walnut on the plate and sprinkle goat cheese around it.
