Kari Underly, butcher and author of "The Art of Beef Cutting", and Cathy Barrow, home food preserver and author of "Mrs. Wheelbarrow's Practical Pantry" collaborate on a pork shoulder butchery and sausage-making demonstration. Students can sample all three types of sausage and enjoy chorizo scrambled eggs wrapped in a flour tortilla.
